Normandy is our most fancy bread that we make. It is made from natural ingredients according to centuries old recipe. It is based on sour dough and does NOT contain yeast. It takes three days to prepare it, as the process of natural yeast-less fermentation is slow. Whole wheat and rye flour with sea salt are the only ingredients. If you've tried a sour dough bread in your local grocery store you'd be pleasantly surprised how different it is (strikingly less sour, for example), and perhaps switch to it entirely, rejecting all sour bread imitations that are needlessly artificially acidified.
